Nestled on 49 stunning acres of vineyards, rose gardens, and rolling countryside, Immerse is run by the Myles family, who purchased the property in 2002, and officially opened its doors in Easter of 2003. What began as a boutique bed & breakfast focused on fine food, wine, and relaxation has blossomed into one of Victoria’s premier wedding, wine, and dining destinations. From the beginning, Steve and Helen Myles dreamed of creating a place where people could escape the everyday and indulge in the best the Yarra Valley has to offer. Their children, Katie and Lachie, quite literally grew up among the vines — and today, the next generation proudly carries that vision forward. Katie now leads the team as General Manager, with Lachie still closely involved and many friends and extended family working alongside them. With many friends and family making up our core team, Immerse is a place built on genuine connection, passion, and heart. | ![]() |
Tails, Tales & TastingsWe’re not just passionate about food and wine — we’re lifelong animal lovers too. Our reserve wine range, “Oscars”, is named after our much-loved golden retriever, who sadly passed away from a snake bite on the property. You may also spot a new name on our shelves: “Albie”, inspired by the rare albino kangaroo who can often be seen lounging in our vineyard. From Lovies to Love StoriesBefore becoming Immerse, the property was known as Lovies — its original restaurant building and one accommodation lodge were transported from Warrandyte, carrying their own stories and charm. Over time, we expanded from a five-room B&B and day spa into a 20-room retreat complete with a restaurant, ornamental lake, and three breathtaking ceremony spaces: our Vineyard Chapel, Garden Chapel & Paddock. We always loved food and wine, but we also discovered that we also just loved LOVE! And what better way to celebrate this than with a wedding?! The Black Saturday Bush fires devastated communities across the state, tragically claiming many lives, and many homes. That same firestorm tore through Immerse. Immerse suffered extensive damage during the fires, with much of the property lost. The devastation was broadcast nationally — but what followed was nothing short of extraordinary. Our family, our friends, our team, and even many of our past and future wedding couples rallied around us with an outpouring of love and support. There were working bees, thousands of roses donated, hands offered, and more kind words than we could count. It was a testament to the incredible strength of our community and the unwavering determination of our family to rise, rebuild, and carry Immerse forward. That moment cemented what we’ve always believed: Immerse is more than a venue — it’s a family. Reconstruction was long and challenging, but we never gave up. Over four years, we restored the accommodation, built our Vineyard and Garden Chapels, and transformed Immerse into what it is today. The fire became not just part of our history, but part of our foundation — a reminder of resilience, community, and family. We are forever grateful to those who have stood beside and supported us through out hardest days.
